First, can someone please tell me what this sort of miscut is called? I'm curious what, if anything, that does to the grade.

This type of bindery defect is referred to as "maverick pages". There is no effect to the grade at this level unless they effect the story in which case you might get a green qualified label. Most maverick page defects have little or no effect on the story. Nice looking book! I am guessing in the 7.5 range! (thumbs u
