What are my options when it comes to getting a signature witnessed at a convention then submitting the book to be signed at a CGC private signing event?

You're missing many details that are necessary to answer the question, but I will take a swing. If you mean you want to get a book signed at a convention that CGC is attending they may be willing to take that to an in-house private signing at the convention, but don't count on it. If you are referring to a book that you submit at a convention that is then graded and returned to you, with a yellow SS label, you would then mail the book without opening the case to CGC for them to crack open and have signed and graded and returned to you.
