I agree -- logo or UPC or price variants are certainly collectable and can be considered variants -- but they're not (to me) particularly exciting in and of itself.

UPC/price variants are like collecting coins... Everything is the same except for this one slight detail (a 30 vs 35 cents, or a D vs an S coin). I see why some people who like this stuff, but it's not my bag.

I'll take an 1894 dime with an "S" on the back, over an 1894 without one.

Minor difference, of course.

The mintmarks demonstrate that the coins were made at different places in the country, and were usually subject to different origins, and distributed in different places, at different times, and in different ways.

Who wouldn't want a silver dollar that was made in the heart of the Old West, Carson City, Nevada, when it WAS the Old West...rather than one made in Philly, for instance?

Or a gold coin made in San Francisco, from gold mined in the Sierras, at the height of the Gold Rush?
