In a recent reply regarding pricing for on site grading at comiccon it said walk thru pricing varies from $150-$1500. What does walk thru mean?

It means there is no wait.  The book is literally "walked through" the grading process from verification to shipping the book (In this case, handing it back to you).  Typically takes a day when you send a book to CGC for walkthrough.

If I were to drop a comic off Thursday to be graded and picked it up Sunday, would that be considered a walk thru?

If you look at the CGC website, everything is explained. For the purposes of onsite grading, the Walkthru tier should be used for books with a value of over 3K.
