What is the point of signed and numbered comics...

Generally speaking, the signed-and-numbered program/project is associated with the release of a comic - so it usually has that "first day of issue" quality that is popular in other collectibles.

Additionally, there's no guarantee that the artist will be around to sign the same book (unnumbered) later - odds are he/she will be signing the book for decades, but you never know.

You're correct that the exact same book can be signed later, so there would be 3 versions... unsigned, signed-and-limited-numbered, and signed-and-unlimited-unnumbered.  Collectors may value those three differently.
