Would this corner just be normal wear and tear, or would this be a ‘chunk missing’?

Some pieces seems to have flaked off over time from the bends/creases. Very common with the age of this book. 

A chunk could be missing from a corner for instance, while the adjacent area around the chunk may be completely unblemished…as if the area was cut clean by a pair of scissors or torn clean.

A blunted corner will generally exhibit a more generalized “defect” that will harm the adjacent area to the blunted impact. Not always color breaking but in this case, the corner defect breaks color from wear over time.
