And if something can change the colour of the paper (dust shadow), is it not also changing the structure of the paper?

Dust shadow is just that... dust embedded in the surface of the paper.

 

Sometimes dry cleaning can remove some or all of it if it's light, but once it sits there long enough the dust particles can fuse (for lack of a better word) with the paper and, in effect, permanently stain it.

 

Sun shadow is when the paper is faded from exposure to light and that is obviously irreversible.
