Was he always sarcastic or is that how he's portrayed only in the movies? I've never followed him and always wondered. If he started off serious, when did his personality change?

The Joe Kelly series from 1997 is when DP became funnier, sarcastic and parodical.

In his early appearances he had some level of sarcasm and irreverence, but nothing to the degree that is shown. He wasn't lol randumb until the internet got a hold of him and emphasized and harped on only those aspects of the character rendering him irritating to an unending degree to me.
