Why do cowbells exist? It's not like they're an apex predator and they can sneak up on us. They're also very easy to spot, so how does a bell come in handy?

I've always assumed it was to help find them in a big pasture, if they get stuck in a fence, or if they wander off.

In many animal herds (and bird flocks for that matter) there is a hierarchy.  One animal is the acknowledged "leader" recognized by the herd at large.  A herd of cows can range over a large area of pasture(s).  Cows have poor eyesight but good hearing, so the "leader" of the herd is given a cow bell so the others can find it if they get separated.  Geese use "honks" for this purpose, coyotes yips and short howls and so on.  Cows haven't developed any real range of vocalizations.
