What happens when

You have a book from "The Collection of" and you crack it for SS. Does the Collection of get left off the label because that's where the name of person who signed the book goes?

I was told that whatever is on the label that is extra from the SS stuff will stay (ie. if its a pedegree book, that info stays on the label along with the SS stuff being added).

if it's signed, is it still from their collection?

It depends, I sent in a Don Rosa Batman: The Cult book (actually 2) that were slabbed with Don Rosa Collection on the label. The books were signed by Wrightson and came back without the Rosa designation. The reasoning was that they were moderns and plentiful, at least that was the explanation I was given. I was able to get 2 Rosa certificates to go with them though...
