I just want a recipe for pantry raid chicken. :sorry:

I modified the recipe and tried it out last night. Now I want to make more modifications.

Didn't feel like driving to the grocery store, so I raided the pantry for tonight's dinner.

Low calorie, low fat, low carb, low sodium, no processed food, no added sugar, ~$3/serving, 30 minutes to plate.

Modification Round #2

 

Made this last night, and it was a total screw-up.

 

I exceeded the maximum capacity of the pan and there was too much liquid. Made a bloody mess, and I had to use a second pan to reduce the sauce. Next time I'm using less ingredients and fully draining the stewed tomatoes.

I'd find a bigger pan and keep all of those stewed tomatos.

Yeah, I think what I'll do next time is use less chicken to get the ratio right.

 

Also, the portobello mushroom didn't really add anything and seemed to get lost in the flavor, so I won't use them again. Plus they're friggin' expensive.

 

The key to this dish is not to overcook the chicken so they stay ultra-tender, which means that liquid can't be reduced during cooking. So the liquid ratio has to be correct going in.

 

Just takes some tweeking, but this is a super simple dish.
