When I first got back into collecting a couple of years ago I thought people were nuts for cracking books out of their slabs.  I was also mostly focused on SA/BA books.  Recently I’ve shifted my focus to GA and have cracked every slabbed GA book I’ve bought.  I like being able to smell, hold and read the same book someone else did 70+ years ago.  There’s a palpable sense of nostalgia you cannot experience by holding a chunk of plastic.  While I know it boils down to personal preference I also feel it has something to do with maturing as a collector.
