I like making icons with photoshop. Here's one I made that advertises a more healthy diet:

You should copy the type layer and multiply it in the later options menu.

So the text will be brighter and pop more. Thus be more readable.

"Multiply" makes white transparent.

If he did this, you couldn't read the text.

Another hint, for a graphic like this, would be to go with san serif type, or the blockier looking type without the little feet at the top and bottom of the strokes. They'll read better in most cases.
