I ran across an interesting item... cgc yellow label Stan Lee and Joe Simon signed. But it's 750. It's a key cap silver age I was going to put in a display with two other cap keys..thoughts?

It is a 9.2, Good price, but likely won't stick at the $750 asking price.

I apologize, I noticed it is a GRR, so I'm not sure I would want to pay more than the $750, the Simon and Lee sigs make it more interesting.

All depends on how much you want a Simon sig on a reprint of a key book, but I assume there are more out there that will become available over time, but no guarantee. Are you willing to pay a premium for buying it now?

If you are talking about the GRR in a case from a different grading company, look more closely at the label. The simon signature appears to be an unwitnessed signature. It names the time and location of the stan lee signature (so, presumably that one was witnessed), but not the simon signature, which is simply listed as "authenticated".
