Maybe tauntauns have a lower natural body temperature and are more prone to hypothermia. 

Which still begs the question why the hell use them as transportation when you have speeders, ships, hovercraft, etc..

The speeders weren't ready yet. They were struggling to adapt them to the extreme cold, and wouldn't be able to do so until first thing the next morning.
